Ingredients | Cake Base
- 150g ground almonds
- 150g ground hazelnuts
- Approx. 2 teaspoons sweetener of your choice
- 1 egg
- 3 beaten egg white
- Optional: 2 tablespoons cinnamon
- A few drops vanilla aroma
- 7g baking powder
Ingredients | Raspberry Cream
- 100g raspberries, mashed
- 1kg light curd or greek yogurt
- A few drops vanilla aroma
- Approx. 5 tablespoons sweetener of your choice
- 2 beaten egg white
- 15g gelatin powder (or vegan alternative)
Ingredients | Raspberry Glaze
- 300g raspberries (can be frozen)
- Approx. 2 tablespoons sweetener of your choice
- 30g gelatin powder (or vegan alternative)
Ingredients | Decoration
- Raspberries
Directions | Cake Base
- Place all ingredients into a bowl and mix them well.
- Distribute mixture on the bottom of a covered cake form.
- Bake it at 160°C for approx. 15 minutes.
- Let cake base cool down for approx. 30 minutes.
Directions | Raspberry Cream
- Place all ingredients into a bowl and mix them well.
- Pour mixture over cooled cake base.
- Let it cool down (best in fridge) for approx. 30 minutes.
Directions | Raspberry Glaze
- Add 300g raspberries into a small pot and mash them at medium heat.
- Add 30g gelatin powder and sweetener of your choice.
- Let it simmer for approx. 1 minute.
- Pour it over raspberry cream.
Directions | Deco
- Decorate cake with raspberries.
- Let it cool down in fridge for at least 5 hours (best over night).
